The bacon-obsessed will have a new Las Vegas destination this fall with the arrival of Bacon Nation. The Downtown Hospitality Group (DHG) concept is brand new to Las Vegas and created with local Chef Josh Green (known for his delicious eats at local hotspots Skinny Fats and Greens & Proteins). Located at The D Las Vegas, the 24/7 hotspot will feature a menu full of elevated dishes featuring 13 gourmet varieties of bacon.
Bacon Nation will surely be a hit for anyone who can’t get enough of the beloved cured meat. Bacon lovers can indulge in breakfast bennies, French toast boxes, and even a BLT made with woven layers of meat. The drool-worthy menu was created in collaboration with local chef Josh Green, known for his work at popular Las Vegas eateries like Skinny Fats and Greens & Proteins. We got the inside scoop from the team at DHG at a recent media preview where we had the chance to taste a little bit of the delicious new menu.
Bacon Nation Opens at The D Las Vegas
“DHG is proud of the menu that Chef Josh Green and our team have assembled,” Abe Taylor, partner of Bacon Nation and DHG, said in a statement to the press. “When developing Bacon Nation, we wanted to create a next-level restaurant that would be a fit for all guests and appetites. This is not your traditional 24/7 concept, and each dish will be as creative as it is delicious.”
Bacon Nation has been in the making for some time. “We’ve been working on Bacon Nation, for now, a year and five months,” Taylor said. “That’s how long we’ve been in this process. So Downtown Hospitality restarted slightly before the pandemic started.”
Greg Costello, a partner of Bacon Nation and founding partner of DHG, said in a recent statement, “We have loved collaborating with the D’s team on bringing this to life. We are introducing a truly unique restaurant to the downtown region that will have incredible food, a fun vibe and an excellent location.” The restaurant has an open kitchen, seating for 120 diners and an additional private room for events.
Since bacon is the restaurant’s primary offering, DHG did not skimp on quality. “We tasted 30 different producers and different cuts of meat in order to come up with this. And quite frankly, what we came up with was my waistline tell you all about,” Bacon Nation partner and founding partner of DHG Greg Costello joked with members of the press during a media tasting event. Over a dozen different flavors of bacon will be offered on the menu ranging from black truffle to chocolate dipped.
The menu features items like the Famous French Toast Boxes, Signature Bennies, a Bacon Flight (with flavors like barbecue, black pepper, everything bagel, jalapeno, honey sriracha, lemon pepper, tajin and more), Disco Dipper Fries, Bacon-Wrapped Pickle Spears, Avocado Toast and more. Standouts also include the Reverse BLT (bread in the middle with a bacon-woven outer layer), the Peter Porker Hero sandwich, a Maple Bacon Cheesecake and the Elvis Milkshake. A selection of diner classics will be offered as well.
The restaurant is scheduled to be open 24/7 from day one. For late-night/early-morning dining, a special system will be put in place. “We’re gonna have a locker system that can be picked up, customers will order online, and they’ll be able to pick up their food and eat it,” Taylor explained. “So we are 24/7 for breakfast, lunch and dinner. And then shortly after we open, we’re going to be introducing a brunch program as well.”
CEO of The D Las Vegas, Derek Stevens, said in a press statement, “As the D heads into this next chapter of renovations on its second floor, we know that Bacon Nation will become a must-visit spot in downtown Las Vegas. We wanted a concept that would deliver great service, a fun vibe and top-notch food. DHG hit the mark on all three with what’s to come.”
