Defining the Waterfront Atmosphere

The initial vision for the venue relied heavily on its prime location along the D.C. waterfront, using natural scenery as the foundation for the guest experience.

“Honestly, the views do a lot of the heavy lifting,” says Zach Wendel, Corporate Director of F&B. “We sit right above the Washington Channel, so from day one the goal was to build a rooftop that felt connected to the waterfront while still delivering a great cocktail experience. The idea was simple: give people a reason to come for the view and a reason to come back for everything else.”

Core Consistency in Service and Design

Maintaining a signature guest environment relies on three unchanging pillars: craft cocktails, scenic views, and attentive service. While consumer trends evolve, the brand focuses on delivering consistent hospitality across every shift.

To maximize panoramic water views while maintaining an intimate setting, the architectural layout pairs sweeping sightlines with cozy seating areas and an indoor lounge.

Adapting to Seasonal Shifts

Operating an open-air venue on the water requires flexible layout management and year-round operational planning.

“You have to stay flexible,” Wendel explains. “The indoor lounge helps a lot, but we also adjust menus, cocktails, events, and operating plans throughout the year. In hospitality, especially on a rooftop, you can’t fight the weather. You adapt to it; the new retractable roof is a huge win for the winter months. It traps the heat when needed, or in the summer we can open it up. The great part is that when it rains, we can close the roof and keep groovin.”

Culinary Pairings and Beverage Strategy

Designing a menu for a high-volume rooftop requires thoughtfully balancing specialized craft offerings with accessible options for casual visitors.

Curating Small Plates for Craft Spirits

The culinary menu emphasizes finger foods and unique bites tailored to complement the bar’s whiskey and cocktail offerings.

“We took the time to study the ethos of Whiskey Charlie and what goes well with the whiskeys we have on the menu, dietary restrictions and fun and unique bites,” says Wendel. “For example, the robust yet fluffy brisket bao pairs well with a rye-forward Old Fashioned, but you can also enjoy our Voodoo Dreams cocktail with our South American Ceviche. It’s a give-and-take experience, and there is a pairing or accompaniment with every dish.”

Balancing Spirits and Service Speed

To cater to both serious spirit enthusiasts and guests looking for a casual drink, the beverage program at Whiskey Charlie features a wide range of options. Bartenders are trained to guide guests through detailed whiskey discussions or efficiently serve crowd favorites like margaritas.

Maintaining speed without sacrificing drink presentation relies on rigorous training and established back-of-house systems.

“Repetition and standards,” Wendel notes. “We spend a lot of time making sure the basics are right before we worry about speed. When everyone knows the expectations and the systems work, the speed comes naturally. Round building is a big focal point we always lean on when we are 2-3 deep behind the bar.”

Community Engagement and Long-Term Growth

Positioned in a busy hotel setting within a major metropolitan hub, Whiskey Charlie balances two distinct customer bases: out-of-town hotel guests and neighborhood locals.

Welcoming Tourists and Local Regulars

While hotel guests find the venue through its location, building long-term success depends on earning repeat business from regional residents. Hotel guests and Hilton Honors members receive prioritized access during peak hours, while the team focuses on providing experiences that bring local regulars back.

“The tourists find us because of the hotel and the views,” shares Wendel. “The locals come back because of the experience. We love both audiences, but if you want long-term success, you have to earn repeat business from the people who live here.”

Building a Lasting Social Destination

Sunset hours, tailored group offerings, and private events play an integral role in positioning the venue as a premier social hub at The Wharf. Looking forward, the leadership team remains focused on refining the guest experience to keep the venue relevant in a competitive nightlife market.

“I think people will continue looking for experiences they can’t get at home, and rooftops fit that perfectly,” Wendel says. “For us, the focus is continuing to improve the guest experience and keeping Whiskey Charlie relevant in a very competitive market. The rest usually takes care of itself.”
