“We wanted to do something that was very approachable, not only from price point but from a food aspect,” the VP of Food and Beverage told us. “To have things that were not just processed foods and that is really handmade and made with love and a lot goes into it. That’s really what sets us apart from a lot of food courts and food halls. All of the concepts here, with the exception of Tony Luke’s, are the first to market.”

At Attaboy Burger, Chef Alex Resnick crafts each burger with a focus on simplicity and quality, ensuring that every bite is packed with flavor from a juicy patty, expertly seared, and complemented by a deliciously addictive sauce on a perfectly toasted bun. “As a group, Oliver, myself, Peter, we’ve all done on-Strip casinos like we opened up a food hall at Aria, and there we’ve got Lola’s Burgers,” Chef Alex Resnick said of the concept. “We kind of wanted to do something a bit more local. Rio was a super good opportunity at the Canteen, something for the locals to be proud of. What we’re going for here is just, simply, everything. I think a lot of people these days are used to going to burger places and getting a giant patty with fifteen toppings on it, and it gets really overwhelming sometimes. They’re all really good, but it’s not really the style we’re looking for. We kind of stripped things back. The menu really only has three offerings.”
Nama Nama
At Nama Nama, guests can delight in expertly crafted sushi inspired by Tokyo’s street food scene, featuring freshly made handrolls and a unique Nitro Matcha Green Tea available on tap. “You can come in and sit down and have six handrolls and a beer and be out in twelve minutes,” the team at Nama Nama explained. “Or you can come in and sit down and have six handrolls and a couple of sakes, a green tea, and sit with friends for 45 to an hour. It caters to both. So, for the convention guest that’s here and has 30 30-minute break from their meeting or expo, it’s a quick in and out. We use really high-quality products. A lot of other handroll bars or to-go bars are sort of a more casual restaurant of a higher-end restaurant, so some of them use the scrap from the higher-end restaurant for their handroll bar whereas we use all high-quality product.”
Southland Burrito Co.
At Southland Burrito Co., Chef Marco Herrera serves flavorful Sonoran-style burritos inspired by his childhood, filled with carefully selected ingredients that create a perfect balance of taste and authenticity. “We’re really excited to be here kicking off the transformation of the Rio,” James Beard Award-nominated Chef Marco Herrera told us. “I grew up in a mom-and-pop Mexican restaurant in El Paso. So you’re seeing everything; we’re doing everything that my parents and my family did. A lot of these flavors are inspired by things that feel familial and feel so much like home to me. We also set out to do a big endeavor, which is to do burritos everyone can understand.”

Patrons can savor a diverse array of chicken dishes inspired by the vibrant culinary traditions of NYC neighborhoods, offering flavorful tenders, sandwiches, and delectable sides reminiscent of Coney Island treats. “Tender Crush is a first-to-market concept from Chris Barish & Julie Mulligan, founders and visionaries of Black Tap Craft Burgers and Beer,” the team at Tendder Crunch told us. “They were really inspired by New York City and the melting pot of flavors. Throughout the five boroughs, we’ve really come up with some great flavors of sauces. We’re here to offer guests a high-quality experience of fast-casual along with some bold flavors some innovative twists, and some familiar flavors.”
Tony Luke’s
At Tony Luke’s, you can now indulge in the iconic flavors of South Philly’s beloved sandwiches without leaving the West Coast. “If you look at how we’re doing them, we do them very differently from a lot of places,” Chef Tony Luke told us about the cheesesteaks. “Most places put the cheese on top, and they put a lid over it to make it melt. We cook everything very slowly, which is why it takes as long as it takes. You don’t want to burn it. A Cheesesteak should never have a crust on it unless it’s a thick steak, not a thin steak. So what we do is when we put the cheese on it, we flip the whole sandwich so that the cheese is on the bottom of the grill and the steak is on top so all the juice that comes out of the steak gets incorporated into the cheese. So, every bite has that full flavor instead of the cheese just lying on top, and the roll grabs most of that juice. This way, it’s all incorporated, and it just gives a whole different flavor.”
