Nobu Opens Inside Paris Las Vegas

Paris Las Vegas welcomed the newest Nobu location in late April with a beautiful sake ceremony. Two of the three founders (Chef Nobu Matsuhisa and Meir Teper) were joined by Caesars Entertainment executives to commemorate the event. We were invited to the private event and got a look at the space and the new updates from Caesars Entertainment.

The restaurant is the third Nobu location in Las Vegas, following the restaurant Virgin Hotels Las Vegas (the first location in town originally opened at the former Hard Rock Hotel & Casino space before it rebranded) and the restaurant at Caesars Palace (along with the Nobu Hotel also located within the property).

“I am honored to join the team of esteemed culinary talent at Paris Las Vegas,” said Chef Nobu Matsuhisa in a statement to the press. “I look forward to sharing some of my favorite dishes and introducing a few signature creations in this beautifully designed space to all of the Las Vegas visitors from around the world.”

The culinary line-up at Paris Las Vegas has increased exponentially with the opening of Nobu, which follows the openings of Vanderpump à Paris and Bobby’s Burgers by Bobby Flay. These restaurants join known spots like Gordon Ramsay Steak and Brioche by Guy Savoy. Later this year, The Bedford by Martha Stewart is set to open.

“Paris Las Vegas is evolving into a premier culinary destination for some of the top chefs in the world,” said Jason Gregorec, Senior Vice President and General Manager of Paris Las Vegas, in a recent press statement. “We are extremely fortunate to have Chef Nobu as a longstanding partner and bring his iconic menu and exceptional service to the resort.”

The new restaurant space opens out onto Le Boulevard, situated away from the casino floor, with seating for 140 guests. Diners can enjoy cold dishes (like the “Salmon or Yellowtail Tartare with Caviar”), hot dishes (like the “New Zealand King Salmon with choice of Nobu Sauce”), sushi and sashimi selections and two Omakase tasting menus.

The partnership between Nobu Hospitality and Caesars Entertainment continues to grow outside of Las Vegas as well. The brand intends to open at Caesars Atlantic City this summer and fall with a new hotel and restaurantl. Hotel and restaurant locations are slated to open at Harrah’s New Orleans in the future too.
