A Taste of Spiedini Fiamma

The restaurant brings a new design and an updated menu to the former Spiedini space, bringing a revitalized update to match the upgrades around The Resort at Summerlin. “The menu was based upon Italian favorites as there is always something for everyone,” Chef Paula Smagacz told us. “Italian cooking always warms the soul, and when you cook with love, it comes naturally to satisfy your guests’ appetites. The menu should feel like you are at your neighborhood Italian café in Italy for a great meal!”

Chef Paula previously worked on the property in other spaces before taking over at Spiedini Fiamma. “I have worked many places since I was last on the property and believe there were so many experiences, colleagues, and cultures that I have adopted along the way, which I hold close to my heart, and they shaped me into who I have become as a chef,” Chef Paula explained. “I’m always looking to share my knowledge and experiences to build the team to be individually strong, which helps build as solidly as a whole team. I love the comradery of our industry, and I still keep in touch with those along the way, even if it is not as frequent as I would like. Many colleagues have become friends and family over time, and that all shapes how I cook and how I run things in the kitchen. I was always supported and encouraged when I was first here on the property, so I am happy to be back, and I want to be the best I can be!”

The menu is a work of art in itself, and Chef Paula enjoys it all. “By the end of the day, I end up tasting a little bit of everything,” She told us. “I enjoy the pastas, pizza, traditional entrees like the Marsala or Plicata, burrata salad…and I have a sweet tooth, so a spoon of sorbet and gelato reminds me of this little Italian market my husband has taken me to many times over the years in the suburbs of southside Chicago where they have amazing goodies.”

At a recent media tasting, we sampled much of the menu, including Saffron Mussels, Crispy Calamari, Beef Carpaccio, Braised Short Rib, Seafood Frutti Di Mare and more, with group favorites ranging across the entire selection. Chef Paula shared some of her menu recommendations with us, “Everyone has different likes, dislikes, and restrictions, so it comes down to ordering what they individually like, but I would say my suggestions would start with the burrata as it’s such a fresh and bright dish, it would definitely include a pizza, and probably the fig and prosciutto as that’s my favorite, and then I would suggest a couple of pastas for the table to share. And of course, as I mentioned before, I like sweets, so you have to have the tiramisu. It’s all about sharing!”
