Downtown Las Vegas is home to a thriving and eclectic culinary scene, and the arrival of Alebrijes is adding a vibrant new layer of authentic Mexican flavor. Located in the heart of the action on the second floor of Neonopolis, this new restaurant offers a unique dining experience inspired by the rich culture and colorful cuisine of Oaxaca. Under the direction of Chef Paco Cortes, Alebrijes aims to transport guests to the roots of Mexico with every bite. The restaurant also recently introduced a drag brunch every Saturday at 11:00 AM and 1:30 PM.

A Taste of Oaxaca in Downtown Las Vegas

Chef Cortes’s Culinary Vision

Chef Paco Cortes has brought his passion for Oaxacan cuisine to the Las Vegas Strip, and his menu at Alebrijes is a celebration of these unique flavors. According to Cortes, his inspiration for Oaxaca comes from it being “one of the most colorful places of Mexico with absolutely amazing flavors!” He notes that a key component of this inspiration is the mole, a traditional sauce from Oaxaca. He has a special vendor that “helps me bring all those products directly from Mexico to Alebrijes” to ensure the authenticity and quality of his dishes. His ultimate goal is for guests to experience the “roots of Mexico” and, once they try his mole, to “fall in love with the flavors, culture and tradition!”

A Location Filled with Energy

The choice to open Alebrijes in Downtown Las Vegas was a deliberate one. Cortes says he “brought Alebrijes to Downtown because I want to be part of the re-make of old Vegas since Fremont Street is iconic and simply amazing.” The restaurant’s prime location, with its patio offering views of the famous Fremont Street Experience and SlotZilla, is a major part of the dining experience. According to Cortes, the patio provides “the best views of Fremont and amazing vibes from everyone, so this makes it an unforgettable dining experience.”

The Spirit of the Alebrijes

An Ambiance of Mexican Folk Art

Beyond the cuisine, the restaurant’s ambiance is a key part of its cultural tribute. The interior is a direct reflection of the restaurant’s namesake, the mythical creatures known as alebrijes. Cortes explains that the “interior design is entirely adorned in the vibrant Mexican folk art of alebrijes, featuring the colorful, fantastical creatures that symbolize imagination and tradition.” This colorful and creative decor adds to the festive and unique dining experience, allowing guests to be surrounded by the art and spirit of Oaxacan culture.
