When Café Lola opened its first location in Las Vegas, it started a trend of quaint, pink cafes around the valley. Even with others trying to mimic the look and success of Café Lola, Alexandra Lourdes and Lin Jerome have come out on top with multiple Café Lola locations around town, including the prettiest couture doughnut shop Saint Honoré and ghost kitchen Pizza Anonymous (located inside Saint Honoré).
With the opening of the newest Café Lola on the Southwest side of town, their empire shows no signs of slowing down. We had the chance to attend the media preview of the newest café and get a look at the stunning space and the delicious menu. We also caught up with Alex and Lin to talk about their outstanding successes and what’s to come!

Can you tell me how it feels to be opening your third location?
Alex & Lin: There are so many that don’t actually know this, but this will be the fourth location we open! We were asked to be a part of Allegiant Stadium and have the perfect spot in Twitch Lounge. It’s surreal thinking how far we have come! We learn so much with each opening, and we feel we are just getting better. We feel fortunate to have a concept that people love and still get excited about with each opening. We feel really proud of this location and can’t wait to share it with everyone.
Are there any features that are completely unique to the space?
Alex & Lin: Yes! With every location, we love to have something that sets them apart while also maintaining what makes us Café Lola. For example, our floral walls we design and put them together ourselves, and this location will have one of the largest ones we have done, and it is completely unique to the rest of our cafés. Without giving away too much, there is also a custom mural that we had done by a dear friend and artist, Lola Sanchez, with Oliver Gal Art!
Is the menu the same?
Alex & Lin: Our menu, we truly feel, is one of the things that sets us apart from a lot of other local cafés. With that being said, the menu will be the same, but with a few exclusive items available only at Rainbow!
How are things coming along on the Forum Shops location?
Alex & Lin: We know we are not the only ones that feel the pain of shipping delays, back-ordered items and everything in between! We’re also designing The Forum Shops location from top to bottom. So, to say the least, there have been setbacks. However, we’re rolling with it all! Like we always do! Everything has been gutted out, and we’re in the process of the rebuild. The location is truly going to be something to see and different from anything else in there.
