“Located within Laguna Cliffs Marriott Resort & Spa, Knife Modern Steak is the West Coast expansion of my award-winning, James Beard-nominated steakhouse concept, Knife,” Chef John Tesar explained. “A stunning cliffside location offering unmatched views of the Dana Point coastline, Knife Modern Steak allows SoCal locals and visitors to experience my signature dry-aging techniques through the menu of reimagined steak and seafood cuisine such as the 240 Day Dry-Aged 44 Farms Bone-in Ribeye and Line Caught Swordfish with Kimchi and crispy pork belly. Creating an all-encompassing, approachable experience for locals and visitors was also a goal for Knife Modern Steak. We ensured accessibility by offering a lower price point than other steakhouses, with the hope that more guests can enjoy our restaurant.” The location is also a personal reflection of Tesar. “California’s coastline is reminiscent of my childhood growing up in The Hamptons and felt like home. Having surfed the entire Golden State coast, I knew the Dana Point area well and was excited to create a home base there.”
