The renowned steakhouse Bazaar Meat by José Andrés has marked an exciting new chapter, moving to a magnificent, expansive new home at The Venetian Resort Las Vegas. This relaunch brings a larger, bolder vision for the carnivorous dining experience, blending avant-garde cuisine, dramatic presentation, and an entirely fresh energy to one of the Strip’s most iconic resorts. The dedication to quality and experience remained the core focus during the complex transition.

The Seamless Transition and Immersive New Design

The move from the Sahara Las Vegas to The Venetian was handled meticulously to ensure continuity, giving the team minimal downtime before beginning their enhanced training for the new location.

Handling the Closure and Intense Training Period

General Manager Eduardo Sanchez confirmed that the team stayed energized throughout the transition. “Having a brief closure was helpful since we were already on the go. It helped with the sense of urgency—everyone was on a mission to make it happen. We were closed for a little over a month, but we worked the entire time, so it was almost as if we never closed. Training started 3 weeks after closure, followed by 10 days of intense training. The team was very reactive to all the changes, and we think the momentum was key.”

Themed Dining Rooms and Homage to the Original

The new space was designed to create a procession of dramatic dining environments, with multiple areas paying homage to the brand’s history. “What I love about this location is how every room has a very unique feel. We have two main dining rooms on our first floor: one that’s light and airy, one dark and moody. When we walked into the room, we immediately had the perfect names: Blanca and Rojo, which are names from our original location in Beverly Hills and Miami. We love an open kitchen at José Andrés Group, and ours features our showstopping josper grill, just like our Sahara location. I call this the “Heart of the House”—this is where all the magic happens. This grill, paired with our dry-aged fridge, really ties back to the Sahara location. We’ve kept the wheel, which is used to raise and lower the grill, from our Sahara location, which we framed in our kitchen, with a beautiful quote for our team as a reminder of our starting location.”

Avant-Garde Cuisine and the Unforgettable Guest Experience

Redefining the Steakhouse Experience

When asked what truly distinguishes the restaurant in the competitive Las Vegas market, Sanchez emphasized the unique vision. “Honestly, everything. Our concept is completely unique and different from most steakhouses. Everything we make is very avant-garde—we have foie gras wrapped in cotton candy and a Philly Cheesesteak with a twist. We have a very precise cooking method for our steaks, which takes about an hour, but we provide such an incredible experience that our guests don’t notice the time has passed because they’re having such a wonderful time. The stories/storytelling, tableside presentations, timing of the courses—all the components together are what make it really unique.”

Menu Evolution and Interactive Cocktails

The closure was also utilized to enhance the culinary program, ensuring the menu remains fresh and exciting for loyal patrons. “We actually started making updates long before our closure! We made several changes to both food and beverage—lots of new dishes, most dishes re-invented: even though the ingredients may be the same, the presentation has been elevated. Our beverage program is constantly developing, with our newest addition, Martini Service, offering a tableside create-your-own martini, which gives you over 40 variations.”

The Venetian Partnership and Future Vision

The relocation to The Venetian Resort provides a host of new opportunities for the Bazaar Meat brand, particularly in attracting and serving tourists seeking a complete Las Vegas itinerary.

Enhancing the Destination Experience for Tourists

General Manager Sanchez is enthusiastic about the new partnership. “The Venetian has been incredibly supportive, and their excitement for the opening has been a game-changer. Being at The Venetian is an experience in itself! There’s so much to do at the resort from gondola rides to entertainment at The Sphere – you can create the perfect night out.” This new location within a major resort promises to integrate the dining experience into a larger, seamless entertainment itinerary for visitors. Sanchez concluded by noting how the new design keeps the restaurant fresh for repeat diners: “The restaurant was designed so that each room creates a new vibe, so every visit feels like a new, unique experience.”
