Fontainebleau Las Vegas is debuting a special culinary offering during the 2025 Wrangler National Finals Rodeo (NFR) by hosting a ten-day pop-up at its refined sports eatery, The Tavern, featuring MICHELIN-starred Chef Ali Clem of Austin’s renowned la Barbecue. Running from December 4 through 14, this collaboration marks the first time Chef Clem’s celebrated Central Texas smokehouse cuisine, which includes signature smoked brisket and house-made sausages, will be served on the Las Vegas Strip. Chef Clem will create a specialized rodeo-season menu that features the “Texas Trinity” and new creations for resort guests. Chef Clem emphasized that the event is intended to celebrate the “spirit of Texas and the thrill of the rodeo” alongside the hotel’s elegance, offering a flavor that is “smoky, bold, and full of heart.”
