General Manager Jon Vetter detailed how the menu was designed to appeal to a wide array of diners, ensuring there is a memorable option for everyone.
Versatile Selection and Seasonal Twists
“There’s something for everyone at Jack Binion’s Steak. Obviously, we’re a steakhouse, so we have the traditional steak cuts for all meat lovers. But we also have non-beef options like the Seafood Tower, Seared Salmon, Scallops, as well as different salads. For those looking to enhance their steaks by adding seafood pairings, we offer those options as well. And you can’t forget about the desserts. We are lucky to serve a variety of flavors for all different tastes,” Vetter said.
The restaurant also uses fun, limited-time specials to keep its offerings current.
“Right now, we’re offering an Endless Prime Rib deal that’s going well. For $49.99, guests can enjoy all-you-can-eat prime rib – compared to the normal prime rib, which ranges from $80 to $94. This offer is available through the end of the year. The core menu usually stays the same, but these fun specials, like the Endless Prime Rib, are great because they keep things fresh, allowing visitors to try something new while enjoying the traditional menu items.”

What truly sets Jack Binion’s Steak apart, according to Vetter, is the meticulous attention to meat preparation and the ambiance designed to reflect Vegas history.
The Binion’s Difference
“Every detail is intentional, from the sourcing of our meat to the cooking process; our steaks really are what set us apart,” Vetter explained. “All our steaks come from Black Angus corn-fed cattle and are aged for 28 days. In the kitchen, the steaks are finished in a 1,800-degree broiler, allowing for a great sear. On the restaurant side, we do our best to make guests feel immersed in a refined, yet welcoming and warm environment. At the end of the day, Jack Binion’s was made to honor Jack Binion himself, and we want to honor that traditional Vegas history.”

Unexpected Favorites
The menu also includes unique details designed to surprise and delight guests, such as the memorable Ketchup Spiced House Potato Chips and a nod to classic Vegas luck.
“Speaking of menus, we have a Jackpot Features section with sides and cocktails priced at $7.77, which is a fun throwback to the Vegas lucky jackpot number. Some of the items include Shrimp Cocktail, Steak Slider and Vodka Martini,” Vetter shared.
Vetter provided the inspiration for the inventive potato chip appetizer: “Reminiscent of barbecue chips or ketchup chips from Canada, our ketchup chips are addictive. The dish features a blend of spices sprinkled onto fresh potato chips and served with our Pepper Jack Cheese Queso. The inspiration or goal was to create an item that would stay in our guests’ memory – something that would be ordered every time the guest returned and something they couldn’t stop eating.”
As for his personal preferences, Vetter’s favorites cover a range of savory and sweet classics.
“Personally, I might have too many favorite items. I love the Ketchup Spiced House Potato Chips & Dip, Crispy Calamari and Fried Mozzarella Heirloom Tomato Salad. For steaks, I’m a diehard Ribeye fan. But every now and then, I love me some Prime Rib. And, of course, desserts can’t be missed. A Banana Cream Pie has been served here ever since this room opened (as the former Bally’s Steakhouse). I think ours is the best of the bunch and rivals any banana cream pie out there.”
