“I think it’s all about authenticity. We know who we are and what we do, and we weren’t going to change and try to be something else, no matter where we open. When you lead with authenticity, when you’re confident about what you do, and the follow-through is your execution at a high level, then it’ll work, and people will understand and be receptive to what you’re trying to do,” Wise says.

The Craft of the Steak
A steakhouse lives and dies by its meat, and Rare Society has built a program that elevates even familiar cuts. Wise explains that their dry-aging process is key to delivering depth and balance in every bite.
“We dry-age our beef in-house, something we’re really proud to do. Each cut spends roughly 35-40 days in our dry-ager, allowing moisture to evaporate slowly and natural enzymes to tenderize the meat. The result is a deeper, more concentrated beef flavor with a clean finish—intentionally mild, never overly funky. We designed our dry-aging program to enhance the character of the steak without overpowering it,” he says.
Alongside the classic ribeye and filet mignon, guests can explore more adventurous selections like tri-tip or Denver steak, all cooked over a wood fire for a subtly smoky, contemporary flavor. Sides follow the same ethos: elevated takes on comfort favorites, from creamy mac and cheese to charred, wood-fired vegetables.

After building a loyal following in Southern California, Las Vegas represented both a challenge and an opportunity. “Las Vegas has always been a far-fetched dream that we somehow made into reality,” Wise explains. “This city is growing exponentially, with a lot of tech, sports and creative talent relocating here. We want to open in neighborhoods, outside the main areas, that we can fold into and form a community around. And that’s what we saw with Las Vegas and the UnCommons development in particular.”
Unlike Strip-focused restaurants, Rare Society offers a neighborhood dining experience where locals can feel at home while still enjoying the polish and attention to detail typically reserved for high-end destination dining.

“Our whole brand was built around combining the best elements of a classic steakhouse with elements of modern, contemporary dining trends. We aren’t white tablecloth—we’re approachable. We cook over a wood fire, so you get a more modern flavor than traditional steakhouse cooking. We serve the classic cuts and sides, but then also we offer more modern, unknown cuts like tri-tip and Denver steaks,” Wise says.
The result is a menu that satisfies purists and adventurous eaters alike, where the familiar and the novel coexist seamlessly.
Building a Community
Expansion for Rare Society isn’t just about new markets—it’s about creating spaces where people feel connected to the restaurant and to each other. “Las Vegas is the sixth Rare Society, our second out of state. Our whole ethos is to grow this brand into markets that will allow us to build a community around it—you may not see us in Los Angeles or New York, but in smaller cities and neighborhoods that might not have this type of concept in their backyard,” Wise explains.
Each new location is carefully chosen to ensure the restaurant becomes part of the local fabric, not just another high-end dining option.
