After introducing their signature red, white, and blue Liberty Bagel, the team began rolling out specialty designs for Christmas, Easter, and the 4th of July. It wasn’t long before corporate giants and media icons took notice. “Once people started recognizing us for that type of product, we started getting calls from corporate companies wanting custom bagels for events,” the owner recalls. “Before you know it, we were doing Yankees bagels, Knicks bagels, custom orders for talk show hosts, and car companies. That really created a huge buzz and a massive following.”

“All the competitors out there are getting Boar’s Head cold cuts and throwing them on sandwiches—and that’s the shortcut,” the owner notes. “The difficult part is doing what we do. Our back-of-house is less of a bagel shop and more of a diner. We have chefs in all our stores making fresh brisket, carved turkey, chicken cutlets, and pastrami in-house every single day.” By pairing traditional, hand-rolled, kettle-boiled bagels with freshly roasted, house-made proteins, Liberty Bagels elevates the standard breakfast sandwich into a legitimate gourmet meal.

When it came to catering to gluten-free customers, the team spent years searching for a recipe that met their strict quality standards rather than settling for mass-produced alternatives. “A lot of gluten-free bagels are purchased parbaked or frozen, and we just couldn’t put our name on that,” the owner says. “So we decided to create our own. It’s called the ‘Bono’ bagel—it’s made with cornmeal, it’s completely gluten-free, and it actually tastes delicious. Most gluten-free bagels taste like paper; this one is special.”
4. Hands-On Hospitality: Family First
Despite their rapid growth and viral fame, the leadership team remains on the shop floor every single day, working directly alongside their staff. “You’ll see owners in all our stores—these stores are not run absentee,” the owner emphasizes. “My father is 81 years old and still works six days a week. My partners and I show up every day. We’re not sitting on a beach in Mexico running our business remotely; we’re working right next to our team.”
That grounded philosophy translates directly into how customers are treated the moment they walk through the door. “When you come in, you’re not just another number or a way to make a quick buck—we treat you like family,” the owner shares. “We greet you and hand out cream cheese samples on spoons like ice cream. A lot of the time, my partners and I give those samples out ourselves. Hospitality is paramount to us.”
What’s Next: Taking New York to the Nation
While fans across the country frequently call in requesting nationwide delivery, the team is actively preparing for the future. With new expansion plans underway, Liberty Bagels is gearing up to launch nationwide shipping soon, bringing their iconic hand-rolled bagels and signature schmears straight to doorsteps across America.
“As much as competitors try to copy us, they can’t get it like us,” the owner reflects. “We’re not in this for a quick buck—we’re in this for the long run. Our goal is to make Liberty Bagels the number one bagel shop in the world.”
