For Las Vegans in the know, the poolside dining option at Palms Place was a favorite for many years. The space was originally home to renowned chef Kerry Simon’s restaurant, Simon. Known for its flavorful menu and imaginative desserts, the restaurant was beloved by locals and Simon fans.
Now, the restaurant space has reopened with a fantastic rebranding and reimagination that honors the original space and the chef that once called the restaurant his own. The new space opened its doors this month as Laguna Pool House & Kitchen, with Chef Luke Palladino at its helm. “We’re very excited and honored to be open in this amazing space and location at Palms Place,” Palladino said at the restaurant’s grand opening and ribbon cutting. “We have an outstanding and expansive menu of offerings at all meal periods, a brilliant team of culinary craftspeople led by Chef John Brunett, and programming that makes each visit a unique experience. We can’t wait to welcome locals and visitors to come and create new memories with us.”

True to the resort’s new traditions with the San Manuel Gaming and Hospitality Authority, the team at Laguna Pool House & Kitchen honored a charity with a sizeable donation—this one honoring Chef Simon and aiding in the fight against the disease that took his life. “My friend, Chef Kerry Simon, operated this very same space until he succumbed to MSA multiple system atrophy in 2015. So I thought it fitting in his honor and his legacy to make a donation to the MSA.” The MSA Coalition helps support resources for those fighting Multiple System Atrophy by providing education to those suffering from the rare disorder.
“I understand that many of you knew chef Carrie Simon and it’s a complete honor to be here to continue his legacy and to work every day towards raising funds and awareness towards what MSA is. MSA or multiple system atrophy is a rare neurodegenerative disorder,” Elizabeth Torres of the MSA Coalition said as she accepted the donation on behalf of the foundation. “It affects at any given time in the United States. 15,000 to 50,000 people. It’s incredibly rare. But for those affected by MSA, it’s not weird at all. Find the MSA coalition works to ensure that those affected by MSA, whether it be them, their family, their friends, or their care partners, have access to support educational resources and are able to understand where we are with research. There is no cure yet, but we wake up every day hoping that that will change.”
