Bourbon Steak by Michael Mina brings a new kind of steak house to the Las Vegas Strip. “I have partnered with Four Seasons in many other cities, and I have always loved their resort in Las Vegas,” Chef Michael Mina told us. “As a Las Vegas local, I also appreciate how easy it is to get to the property. You can literally drive right up to valet, and you’re here—the easiest restaurant to get to on the Strip! Bourbon Steak is the ultimate dining experience, where we take what you know and love about a traditional steakhouse and push it to the next level. With the beauty and luxury of the Four Seasons, we found the ultimate home for this restaurant.”
From expertly prepared cuts of steak like the A5 Japanese wagyu to inventive appetizers such as Little Neck Clams with cherry pepper granita, every dish reflects Mina’s philosophy of product, technique, and presentation. “Everything that is on the menu takes into consideration product, technique, and presentation,” Mina explained. “My favorite example to share on how we bring this to life is our Spinach Souffle with Bacon Parmesan Cream. Creamed Spinach is one of those classic steakhouse staples. So here, we take that product (spinach), utilize a new technique (souffle), and present it in a whole new way by pouring a bacon parmesan cream in the middle.”
“We put the same emphasis on cocktails as we do the food,” Mina said of the menu. “Of course, you’ll see a classic martini on the menu, but in addition to vermouth, we add a yuzu Manzanilla sherry yuzu essence that brings the drink to life in a new way. And, of course, bourbon has to play an integral role! Every Bourbon Steak has a signature Old Fashioned, and, here, ours is made with Russel’s Reserve 10-year Bourbon with flavors of apple, coconut, and toasted pecan.” Complementing the culinary delights is a thoughtfully curated selection of sides and desserts, including the luxurious Bourbon Flambéed Valrhona Chocolate Fondue and a revitalized take on the Root Beer Float adorned with 24-karat gold leaf.
Though the new Bourbon Steak is one of nine locations around the country, Las Vegas gets specialty items to call its own. “Two appetizers were created specifically for Las Vegas: The Caviar “Twinkiee” with yuzu crème fraiche and Persimmon “Raviolis,” Mina told us. “Our Twinkiee is the most decadent version of the packaged snack – it might look like the Twinkie you grew up with, but the flavors and punch of caviar are out of this world. It’s the perfect Las Vegas dish! And the Persimmon Raviolis look like a traditional ravioli starter, but the noodle is actually a persimmon, stuffed with stracciatella cheese and topped with basil, pistachio, and pomegranate. For desserts, we brought back a favorite of mine: The Root Beer Float. With Root Beer poured tableside on top of sassafras ice cream and gold flakes, it’s decadent, delicious, and brings back all the nostalgia of old-fashioned root beer stands.”
The restaurant’s design reflects its culinary elegance, offering a space that is both welcoming and luxurious. Designed by NMDA, the interiors capture the essence of a contemporary supper club, featuring deep peacock-inspired tones, gold details, and bespoke artwork crafted by a local artist. “The space was designed to create multiple experiences in one,” Mina said of the dining room. “The idea was to allow you to enjoy Bourbon Steak in many different ways – a drink at the bar, meeting up with a few friends for drinks in one of the smaller nooks in the lounge area, an intimate dinner in the dining room, and stunning private spaces for events. There are a lot of colors and patterns, but it all flows seamlessly together to feel warm and welcoming. There are nods to traditional steakhouses in photography, but then we have spray-painted flowers on another corner done by a local artist. Just like the menu, we take what you know and elevate it to the next level.”
The atmosphere is beautifully enhanced by the soft radiance of intricate lighting and an eye-catching gold ceiling that serves as the focal point of the lounge’s bar area. Featuring sophisticated, secluded spaces perfect for intimate gatherings and complemented by live music, Bourbon Steak masterfully merges upscale dining with a lively and inviting social environment. “I love live entertainment,” Mina told us. “It totally sets the energy of the space. So, we’re looking to bring in different DJs and bands to create unique experiences. We have our grand piano hooked up to the overall sound system, so every seat in the space can enjoy the music – that was very important to me!”
