A new and playful dining concept has arrived at Block 16 Urban Food Hall inside The Cosmopolitan of Las Vegas. Naughty Patty’s is a fun and cheeky burger joint with a menu curated by Executive Chef Mark Crane that’s a “love letter to comfort food.” It’s a place where indulgence is celebrated, from juicy burgers with crispy edges to crave-worthy frozen custards. With its bold personality and high-quality ingredients, Naughty Patty’s is a standout addition to the resort’s culinary lineup.

The Naughty Patty’s Philosophy

A Burger Built on Science and Art

Naughty Patty’s signature smash burgers are at the heart of the menu, and their creation is a meticulous process. Chef Mark Crane explains, “It all starts with the beef. If the blend is too fatty or too lean, the burger will not achieve the crispy edges or juicy interior that define a true smash burger.” The cooking is done with precision on a griddle kept at exactly 475 degrees Fahrenheit. Crane details the process: “Each patty cooks for three minutes on the first side and one minute on the second, before being topped with New School American Cheese and rested briefly for the best flavor and texture.” The final assembly is also carefully measured, ensuring a perfect build every time. For Crane, “creating the perfect smash burger is as much science as it is art.”

The Menu: Beyond the Burger

While the burgers are the main event, Naughty Patty’s offers a full range of decadent and tempting items. The menu includes the classic “Naughty Patty” burger, a “Melt Down” grilled cheese, and a “Dirty Dog” loaded with chili and mustard. For sides, you can find fries that can be ordered “naked” or “dirty” with chili and cheese. The desserts are equally impressive, with a selection of rich frozen custards called “Concretes.” Chef Crane notes that they “perfected our frozen custard during the research and development stage,” ensuring a consistently thick and delicious product. He gives the example of the Oreo Concrete, which uses three levels of Oreo for a layered texture.

A Vibe That’s All Fun and Games

Fast-Paced Fun with a Playful Attitude

The restaurant’s location in a high-volume setting like Block 16 requires speed and efficiency, a challenge that Chef Crane says the team was ready for. “Opening weekend brought a lot of excitement and heavy traffic, and that’s where our detailed training really paid off,” he says. The menu was designed from the beginning to be fast without compromising on flavor, with a goal for orders to flow within 8 to 10 minutes. For Crane, the “mischief” and “playful attitude” of the brand are a perfect fit for The Cosmopolitan. He says, “This concept is The Cosmopolitan to a T — luxury with a wink, the right amount of wrong, and exactly what the space needed.”

Exceeding Expectations

Ultimately, Naughty Patty’s is all about providing a fun and delicious experience that exceeds guest expectations. Chef Crane says the brand personality is “all about being upbeat, positive, and a little cheeky.” The team is dedicated to satisfying every craving and is open to feedback and new ideas, including “limited time offers and seasonal creations.” The brand’s philosophy is simple: deliver fast, delicious, and craveable food with a lighthearted and playful approach. As Crane puts it, “It was wonderful to bring this concept to life and to have fun while doing it.”
