“As the weather cools down, people tend to stop gathering outside and start settling in. Den of Cards is about that shift. It’s meant to feel like a warm room on a winter night where you’re playing cards, talking too long, and not in a rush to leave.”
That intention is immediately felt upon arrival. Designed by renowned interior architect Martin Brudnizki, Doyle Bar pairs refined mid-century aesthetics with a relaxed, welcoming energy that invites guests to settle in rather than rush through the experience.

“A lot of these drinks lean into fall and winter flavors in a subtle way. Pear and rosemary, apple tea and caramel, figs and spice, cider and ginger. They’re flavors people already associate with colder months, just presented in a more unique and thoughtful way,” says Sheffey.
Standout selections include Queen of Clovers, a gin-forward cocktail enriched with apple tea and caramel, and Four of a Kind, which balances fresh pear with aromatic rosemary. Smoke Stack delivers a warming combination of apple cider and ginger, served in a mug meant to be cradled on chilly evenings.

Craftsmanship Beyond the Glass
Several cocktails on the menu showcase the bar team’s most ambitious creative processes to date. S’more Decks, often described as the emotional core of the menu, draws inspiration from childhood winter traditions and features house-made Maker’s Mark marshmallows that were infused, toasted, and refined through extensive experimentation.
“We’re especially excited about the tea infusion in Queen of Clovers and the house-made marshmallows in S’more Decks. Both took a lot of trial and error, but they add so much depth. They’re not just garnishes or flavors, they’re part of the full experience.”
Other inventive highlights include Runner, Runner, where a subtle saline adjustment transformed the balance of muddled grape, and The Gambit, a striking blend of beet, gin, Aperol, Yellow Chartreuse, and lavender bitters. Though unexpected on paper, the drink delivers elegance and balance, rewarding adventurous guests.
