The menu features a number of game-day foods like Chicken Tenders, Loaded Tots and Pulled Pork Sliders, aside from fun new flavors like Spicy Tuna Bites, Vegan Chorizo and Potato Tacos, and a Hot Fried Chicken Sandwich. “Our burgers will be among the best on The Strip,” Sean Christie, CEO of Carver Road Hospitality, told us. “The Flanker-1 Western Burger, a half-pound of brisket and short rib blend, with our BBQ sauce, onion ring, and roasted jalapeno aioli, on a white cheddar pretzel bun, is over the top and decadent just like Vegas.” The culinary team already has one hit on the Strip. “Carver Road Hospitality Corporate Executive Chef Daniel Ontiveros, who was at the culinary helm at award-winning Carversteak in Resorts World Las Vegas, will lead the team at Flanker to deliver enhanced American classics, including scratch burgers, sliders, shareable tacos, salads and bowls.”
The space is designed to be a hit with sports fans of all kinds. “With the Formula One Las Vegas Grand Prix coming to town in November, F1 fans visiting Flanker will get a kick out of being guided through the main dining room by the ceiling lights, which are reminiscent of speeding racecars lights,” Christie explained. “Every seat in the house will have a great view of sporting events either on the super high-definition LED wall or the numerous screens along the walls and above the bar and lounge. Murals pay homage to the city’s storied sports history. Flanker will also have three private dining suites for 20, 40 or 60 guests combined and a private karaoke room seating 20 which for group dining and events. A 24-seat dining patio and a takeout window inspired by stadium concession stands are conveniently located steps from the walkway to Allegiant Stadium.”
Christie has a long history of success in Las Vegas, and Mandalay Bay has a special place in his heart, “I began my career in Las Vegas over 20 years ago across the way at House of Blues, and my last corporate job was as an MGM Resorts executive so creating Flanker at Mandalay Bay is a full-circle professional moment for me,” he said of his experiences.
