The menu includes Whiskey Brined Pork Belly & Hokkaido Scallop Duo with Crispy Leeks, Creamy Sweet Peas and Pomegranate Glaze; Cumin Seared Halibut Cheeks with Street Corn Stone Ground Grits and Roma Relish; 10 Oz. Bone-In Filet with Smokey Red Chimichurri and Sausage Spiced Cauliflower; and Bourbon Peach Upside Down Cake with Vanilla Bean Gelato. The prestigious five-course dinner, spearheaded by Executive Chef Creon Mallet, will be held on Wednesday, July 26, at 6 p.m. Each course is paired with finely crafted Orin Swift wine for an optimal dining experience. The thoughtfully curated dishes include Tuna Conserva, Chorizo Croquettes, Spanish Octopus Carpaccio, Chimichurri Rubbed Wagyu, and Burnt Basque Cheesecake with apricots and pistachio sesame honey.
