A Creative Concept: Savory Meets Seasonal

The unique cocktail list incorporates culinary elements not traditionally found behind the bar, such as butternut squash, clarified butter, dill, and cumin.

When asked about the inspiration behind using these unusual, savory ingredients, Isai Xolapa explained his creative vision for the season:

“One of my core creative concepts for this season was to create something both unique and refined. I wanted to give guests flavors that were surprising but approachable, and that captured seasonal flavors. Savory cocktails are a rising trend we have seen recently, which offers a whole new flavor profile for cocktails. Achieving balance with these cocktail ingredients takes a lot of experimentation and precision, and I strive to ensure the menu is balanced, featuring sweet, dry, and savory cocktails so there is an option for everyone.”

The Hearthside: Capturing the Essence of Fall

The standout Hearthside cocktail at W Philadelphia blends smoky Scotch with the creamy sweetness of squash—a combination that truly defines the menu’s innovative approach.

Isai Xolapa detailed the development of this intriguing drink:

“The Hearthside, which went through multiple rounds of testing to find the right balance of flavors. The squash provides a creamy texture and nutty sweetness that balances the tart pomegranate and the smoky notes of the Scotch. With the unexpected combination of Scotch, pomegranate, and butternut squash, the concept is adventurous but familiar while capturing the essence of fall.”

Zero-Proof Cocktails and Presentation

The menu’s commitment to sophisticated mixology extends to its non-alcoholic offerings, ensuring all guests enjoy seasonal complexity.

Intentional Zero-Proof Options

The inclusion of three detailed zero-proof options at W Philadelphia—The Verdant, Little Rebel (spiced rum zero proof), and Smooth Operator—demonstrates a strong philosophy toward inclusive beverage service.

According to Xolapa, the non-alcoholic drinks are given the same attention as their full-proof counterparts:

“Our approach to zero-proof cocktails is the same as our full-proof cocktails. They start with the same creative process of blending seasonal flavors. We want each cocktail, zero-proof or full proof, to feel intentional.”

Elevating the Guest Experience

With ingredients and influences spanning global traditions (like Aji Amarillo and Mexican vanilla), and meticulous details given to presentation, Xolapa ensures the drinks match the chic atmosphere of the Living Room.

“Every detail in each cocktail is intentionally chosen to elevate the guest experience. The Living Room is refined yet inviting, and we want each drink to feel and taste exceptional, so everything from garnishes to ice must be cohesive and balance global influences while incorporating local ingredients and spirits to tell a story.”
