Bramàre offers a new spin on the classic Italian restaurant, providing a much-needed feature—late-night dining. “The inspiration behind Bramàre was a modern Italian restaurant that stays open late, similar to restaurants in New York,” managing partner Evan Glusman told us. “Las Vegas is a 24-hour town, but there is a lack of dining options after 10:00 p.m10:00 p.m. We felt that creating a sexy ambiance with expectational food would be a success, and the location was perfect as it is in the central part of town.”
Bramàre’s Unique Approach to Italian Cuisine
Bramàre, named after the Italian word for “to crave,” invites diners to indulge in a sensory feast characterized by exquisite dishes and an enchanting atmosphere. “Bramàre focuses on modern Italian food in a shared social dining experience- this is our take on family-style dining,” Glusman said of the dining experience. “Our cocktail program features several of our own creations, as well as the classics. Three things set Bramàre apart from the rest: the presentation, the dining program consisting of the food and beverages and the alluring atmosphere. That’s what makes us so special. We also are open until 3:00 a.m.3:00 a.m., further setting us apart.”
Combining the expertise of legendary restaurateurs Constantin Alexander and Evan Glusman with the creative genius of Executive Chef Joe Valdez III, Bramàre is redefining Italian fine dining. “Chef Joe Valdez III has traveled to every region of Italy, that is why we say “inspired-Italian,” Glusman explained of Chef’s expertise. “We take ingredients and styles from Italy as a whole as opposed to focusing on a specific region. Our most popular dish is the Iberico Pork Secreto. It is, without a doubt, the best pork in the world, and it is from Iberico. It is so tender that you can literally cut it with a fork.”
How Bramàre Brings Modern Italian to the Night Owls
Each thoughtfully crafted dish pays homage to traditional Italian flavors while elevating them with modern twists, offering a rich and unparalleled dining experience. Not one to skimp on quality, diners will instantly notice a difference in the taste and texture of dishes that are crafted as carefully as possible, with the best components. “Bramàre uses the finest Italian ingredients, which are often not found in North American Italian restaurants. We blend different regions of Italy, thus creating inspired Italian,” Glusman said of the restaurant’s dedication to quality and sustainability. “From New Zealand Ora King Salmon to Iberico Pork Secreto from Spain, Bramàre imports some of the finest and sustainably sound products on the market. Ethically raised and carefully monitored, we take great pride in ensuring our guests are always receiving the highest quality ingredients. We focus on these ingredients, treat them simply, and let them shine.”
With its commitment to culinary excellence, coupled with an avant-garde beverage selection curated by acclaimed mixologist Oscar Takahashi, Bramàre has quickly become a distinguished destination, capturing the attention and taste buds of both locals and visitors alike. “Las Vegas is known for amazing restaurants and nightlife, and yet there are not many options available for industry workers outside of gaming bars,” Glusman told us. “The Sphere, the Golden Knights, and other shows typically let out after 10:00 p.m.10:00 p.m., and again, these patrons have nowhere to eat, even in hotels, and that was the gap we sought to fill.”
