Chef Sarah Thompson’s Journey to a James Beard Award with Casa Playa

When Executive Chef Sarah Thompson was named “Best Chef: Southwest” at the 2026 James Beard Restaurant and Chef Awards in Chicago, the victory marked a turning point for fine dining in Nevada. Thompson’s win ended a 15-year drought for individual Las Vegas chefs and made her the first female chef on the iconic Las Vegas Strip to earn the prestigious honor.

For Thompson, the recognition reflects a broader cultural transformation taking place along the Strip. “It means so much, and I think it signals something real about where Las Vegas is headed,” Thompson reflects. “For a long time, this city was seen as a place where talent came to execute, but I feel that things are shifting with chefs being deeply personal with their work here, and it’s wonderful to see that recognized on a national stage.”

Since opening Casa Playa inside Wynn Las Vegas in 2021, Thompson has redefined modern Mexican cuisine through a coastal lens, blending rigorous culinary technique with a progressive workplace culture.

Redefining Leadership in Las Vegas Fine Dining

Historically, fine-dining kitchens on the Las Vegas Strip have operated as male-dominated spaces. Thompson’s breakthrough as the first female chef on the Strip to earn a regional James Beard award represents a deliberate shift in who holds leadership in high-volume luxury dining.

“It’s something I carry with a lot of gratitude,” says Thompson. “Fine dining on the Strip has historically been a very specific kind of space, and being part of changing that feels meaningful. I think about the women who came before, the ones coming up behind me, and myself. If this opens a door or shifts what feels possible for someone, that’s what matters most.”

Thompson has actively translated that ethos into everyday operational practice. Over half of Casa Playa’s kitchen staff are women—a landmark figure for a major casino resort venue. Her approach to leadership stems directly from her early culinary career in New York City, where she worked at celebrated institutions such as Cosme and Marea, and was mentored by Chef Daniela Soto-Innes.

“Daniela showed me what it looks like to lead with generosity and still hold high standards, and that those two things aren’t in conflict,” Thompson notes. “Watching her build community inside a kitchen, and the way people rose to meet her belief in them, was really formative. That’s the spirit I try to bring to Casa Playa, and the hope is that the kitchen always feels like a place where people can grow and evolve.”

Authentic Masa: Oaxaca Heirloom Corn Meets Luxury Dining

At the center of Casa Playa’s menu is an intensive, in-house nixtamalization program. Rather than opting for mass-produced products, Thompson imports six distinct heirloom corn varieties directly from small producers in Oaxaca, Mexico, via Masienda. The kitchen performs ancient nixtamalization processes on-site daily, grinding fresh masa for their housemade tortillas and signature dishes.

Executing a time-intensive, small-batch Mesoamerican tradition within the fast-paced, high-volume environment of a luxury resort presents unique technical and logistical demands.

“The masa program is one of the most demanding parts of what we do at Casa Playa, and also one of the most essential,” Thompson explains. “Working with six corn varieties sourced from small producers in Mexico through Masienda and nixtamalizing everything in-house means every batch is hands-on and time-intensive. Sourcing at that level requires real planning since natural variability is part of the process. But that variability is also what keeps the program honest and alive, and is a large part of the restaurant’s ethos.”

Balancing Pacific Seafood and Local Regional Farms

Casa Playa’s coastal Mexican menu rests on the interplay between fresh ocean catches and regional agricultural harvests. The restaurant sources wild-caught seafood along the Pacific shoreline—including Baja California striped bass, Tomales Bay oysters, and wild Kampachi—while maintaining partnerships with purveyors connected to 50 local and regional farms across Nevada, California, and Arizona.

This duality is evident in signature menu items like Kampachi paired with tomato dashi, charred avocado, and finger lime, or Crispy Tilefish prepared with cilantro, ginger, and habanero.

“The two are really in constant conversation with each other at Casa Playa,” Thompson says. “The seafood sets the foundation, and the produce responds to what’s most alive in a given season across the farms we work with in Nevada, California, and Arizona. Neither dictates to the other, and that balance is a big part of what keeps the menu evolving.”

Work-Life Balance and Community Equity at Wynn Las Vegas

Under modern James Beard Foundation evaluation standards, culinary excellence must be supported by workplace equity, community involvement, and sustainable culture. Thompson actively partners with culinary and social initiatives, including the Women’s Hospitality Initiative, Hot Bread Kitchen, Meals on Wheels, and the Friends of James Beard Foundation.

“The James Beard process was a good reminder to articulate things that can become second nature,” Thompson reflects. “Working with organizations like Women’s Hospitality Initiative, it doesn’t feel like something separate from the restaurant, but rather something that shapes how we hire, train, and think about opportunity. The goal is for the team to feel connected to a larger conversation about who gets to lead in this industry.”

Transitioning from New York’s intense dining scene—where she worked with NoHo Hospitality Group, Marea, and Cosme—to opening Elio at Encore before taking the helm at Casa Playa taught Thompson how to build for long-term operational success.

“New York was definitely a formative foundation,” Thompson explains. “The kitchens at Marea, Cosme, and through the NoHo Hospitality Group were exacting in the best way. Coming out to open Elio, and eventually lead Casa Playa, meant thinking about building for the long term, not just executing at a high level day to day. The scale and pace here really do push you toward thinking about leadership differently, and personally, it’s been a lesson in showing up consistently rather than just intensely.”

The Future of Casa Playa and Las Vegas Cuisine
