“Many of our signature dishes like Osso Buco, Pappardelle Mimmo and Agnolotti are still prepared the same way my family made them growing up in Italy, using fresh ingredients, patience and simplicity,” says Chef Mimmo. “At the same time, I enjoy refining presentations, incorporating seasonal ingredients and introducing modern techniques that elevate the experience without losing the essence of each dish. Italian food should feel timeless, not trendy, so innovation has to complement tradition rather than replace it.”

A large part of it is making sure repeat guests always have something new to experience and try.”

“My vision is to continue preserving the authenticity and hospitality my parents built while also finding new ways to connect with younger generations of diners,” Ferraro reflects. “Younger guests are looking for experiences that feel genuine, educational and memorable, whether it’s curated wine dinners, seasonal tasting menus or learning more about regional Italian cuisine. The goal is to ensure that in another 40 years, people are still gathering around our tables to experience the same warmth, passion and sense of family that defined Ferraro’s from the very beginning.
